10 Minute Thai Shrimp Curry

This tasty and flavorful meal can be customized any number of ways. You can use whatever veggies you have on hand, for example.  Or you can replace the rice with quick-cooking rice noodles. If you don’t like shrimp, you can easily replace the shrimp with thinly sliced chicken, beef or pork.  You likely need to cook it a little longer though to make sure its fully cooked.

One day the author came up with this quick and innovative pizza recipe when she discovered her fridge was almost empty.  She had just the right ingredients to make this quick and delicious pizza.  One of her tricks is “DO add plenty of cheese.”

10 Minute Aromatic Veggie Fried Rice

This delicious rice is flavored with ginger, garlic, sesame oi, soy sauce and rice vinegar.  It is packed with veggies (corn and peas), and has protein from eggs.  Sounds like an amazing dinner!  So, how did the author pull of this aromatic, tasty recipe in just 10 minutes?  Her secret is to use packaged pre-cooked rice, which cuts down on cooking time substantially.  Another trick we’ve used before to cut the time out of rice cooking is to make a big batch of it and then freeze it in the portion sizes you tend to cook with.  That way you only need to cook rice one and it can work as a base in multiple meals.  Just take it out the night before and let it defrost in your fridge until you are ready to cook with it.
